Faraway chocolate class

Upstairs at the Nantucket Culinary Center on Federal Street, we give two hours entirely to chocolate. This is real bean to bar craft, the same work behind every Faraway bar.

You will taste single origin chocolate from origins such as Venezuela, Ecuador, and Peru, and learn how the character of a place shows up in a single square. You will learn to temper, the step that gives chocolate its snap and its shine. And you will flavor and mold your own bars to take home.

Cacao has been in my family a long time. We have made chocolate since 1865, and my own beginning was in Venezuela, close to the trees. I trained in Michelin kitchens before turning fully to this. Teaching it is one of the real pleasures of the work.

The group stays small, so the evening moves at the pace of a conversation. Bring your curiosity. Create your own spectacular chocolate bars.

Guests make three custom bars during class. Bars are chilled, wrapped, labeled, and ready for pickup the next day at our shop on Old South Wharf.
